
Local Island Beef is sold in Whole, Half or Quarter Sides (includes cut, wrap and freeze).

Steak (standard thickness ¾” or your choice if ordering 1/2 side)

Sirloin (top butt) 8 sirloins large to small cut (large serves 2)
Round (packaged as full or half round)
Top Round (More tender)

Roast (standard size two-three pounds)
Prime Rib (If this roast is requested it eliminates a portion of the rib steaks.) Sirloin Tip 1 or 2 roasts
Chuck (Pot Roast) 6-8 roasts

Rump 1 or 2 roasts
Brisket 1 roast (or stew meat or hamburger)
Other Cuts
Stew Meat 6 lbs of lean cubed meat
Short Ribs 3-4 packages (1-1/2 pounds each)
Soup Bones 3-4 packages (1-1/2 pounds each)
Ground Beef 1, 1 1/2, or 2 pound packages (approx. 65-70 pounds)
Note: Loss from bones, fat, etc., is approximately 30% of carcass weight. Package or take-home weight on a half beef would be approximately 270-320 pounds. To split a half beef, cutting instructions must be identical for equal portions of meat.
Slaughter in the San Juan Islands is conducted by a variety of means including the Mobile Processing Unit (run by the USDA) and carcasses are delivered to Island Grown Farmers Cooperative http://www.igfcmeats.com/4.html year-round.
